Open the Instant Pot and switch to 'Saute' mode. Let the pressure release naturally for 5 minutes, and then quick-release pressure. Close the Instant Pot with the lid and Pressure Cook for 15 minutes. Add 1/2 cup of water and the grated or pounded jaggery and mix well. Now add the marinated pork and give it a stir. In 7- 8 minutes your onions should have turned brown. Add the mustard seeds and chopped onions. In the Instant Pot, heat the oil (you can use vegetable oil but I like to add mustard oil for more depth of flavor). Keep the marinated pork aside for 30 minutes or even overnight. Marinate the pork pieces in the spice mix and the marinade. Prepare the marinade by blending together the tamarind, garlic, ginger, and vinegar. Start by preparing the dry spice mix - lightly heat the whole spices on a pan grind them together using a spice grinder or blender.
